I just returned from a trip to Mauritius. The hotel is called Salt of Palmar. As the name suggests, they place great emphasis on using the right salt. I’ve been doing this for over 20 years. Some I rarely use, like Kala Namak. I think the right salt is especially important for fish.
Everything in moderation. I tend not to over season my food but not salting something is also a crime! š
